It's kale by comparison

We are blessed indeed by rain and warm weather so our gardens are growing like crazy. After waiting, planning, journaling, watching, praying, it is by the grace of God that we can now harvest what we have so longed for -- fresh vegetables.
We have been enjoying potatoes, cucumbers, onions, basil, dill, lettuce, spinach and kale. That's correct - I thought I would try something different this year and planted two kale plants. It looks like something leafy and not very easy to cook with, but....
I found a recipe for crisp kale and if you click on the title to this post, you will be redirected to the recipe on About.com. I was interrupted by a phone call and left it in the oven too long, but in the end... it was quite delicious.
Daniel was out here last night doing photographs 101 with his dad and tried it. He had heard it was a "super" food packed full of good stuff. In fact here is chart with some more info about kale...

As you can see, it is a super star among foods. When I find some more recipes that work I will be sure to share them with you... in the meantime if I can squeeze out some time, we are having fresh pasta and pesto. The basil is prolific this year.

  1. Come over and get cilantro whenever - it's right by the pond... It keeps trying to go to seed - and flowering - there is parsley there that looks kind of like it - but help yourself... I do usually freeze it for salsa, but I know I'm not going to have time. I'm feeling kind of frazzled... We'll definitely get together here soon!
