Wheat Berry Salad

Here is a recipe for U.S. Congressman Collin Peterson's Homegrown Economy Conference...

Wheat Berry and Corn Salad Recipe
by Sodexho Campus Services Chef Chris Serio, U of M, Morris
Makes about 1 pound of salad
Hard Red Wheat Berries - 5 oz ( Cooked)
Salad Oil 2 Tbsp
Red Wine Vinegar 1 Tbsp
Salt 1/4 tsp
Pepper 1/4 tsp
Whole Kernel Corn 6 oz - Thawed
Green Pepper 3 oz (diced)
Red Peppers (Roasted) 1 oz (diced)
Green Onion 1/2 oz (sliced)
Make dressing by combining oil, vinegar and salt. Pour over cooked wheat berries and vegetables. Marinate overnight.

While I have eaten salads similiar to this, I have not created this one because I found it recently in our pile of stuff here at work. I did read somewhere that this is best eaten within one day of chilling because the berries will get harder ... let me know if you try it.. and how you like it. Until next time. Sue
